Happy Saturday y’all! You know I love baking on the weekends! Last night, I made the most delicious dessert/breakfast, perfect for Valentine’s Day! These pecan raspberry bars will satisfy your sweet tooth, and are so simple to make. Go to my Instagram (HERE) to watch the reel!
Recipe:
- Non-stick cooking spray
- 1 1/2 cups butter, softened
- 1 1/2 cups of sugar
- 3 large egg yolks
- 3 cups All-Purpose Flour
- 1 cup chopped pecans
- 1/4 teaspoon salt
- 1/2 cup raspberry preserves (I did a full cup, and that was the perfect amount)
Heat oven to 350°F. Coat 13 x 9-inch baking pan with non-stick cooking spray. Beat butter and sugar in large bowl with mixer on high speed until light and fluffy. Beat in egg yolks.
Stir flour, pecans, and salt in a medium bowl until blended. Gradually add to the butter mixture, blending until evenly moistened. With lightly floured fingers, press the dough in bottom of prepared pan to form the crust.
Spread preserves evenly over the crust and bake 35-45 minutes. Let the pan cool completely before cutting. I used a heart-shaped cookie cutter for the bars, and added some festive red and pink sprinkles!
I had one for breakfast this morning and it was so yummy! They would be great to serve at a Galentine’s party, a night in, or to enjoy as a sweet breakfast Valentine’s Day morning! Sending lots of love! ❤️💋
